Food must be protected against cross contamination by proper storage. Raw ground beef and raw chicken were stored above ready-to-eat foods in the refrigerator. Potentially hazardous foods must be maintained at proper temperatures; this includes hot foods at 135 degrees Fahrenheit or above and cold foods at 41 degrees Fahrenheit or below. Marinating chicken was measured at 51 degrees Fahrenheit. Potentially hazardous foods prepared and held refrigerated for more than 24 hours must be properly labeled with the date the product must be consumed or discarded. A large container of potato salad in the refrigerator was not properly date labeled. Materials that are used in the construction of food contact surfaces may not allow the migration of deleterious substances. Raw chicken stored in contact with a trash bag while marinating. If chemical sanitizer is used in the establishment, the chemical sanitizer must be present in the establishment. There was no chemical sanitizer present.
