This includes hot foods at 135 degrees Fahrenheit or above and cold foods at 41 degrees or below. Food products in the produce walk-in cooler measured at 47.8 degrees Fahrenheit. A mold-like substance was found in the soft-drink dispenser behind the bar. Food contact surfaces must be kept clean to the sight and touch.

An employee was observed changing his gloves without first washing his hands. Proper procedures are to remove the soiled gloves, wash hands, then put on new gloves. A 6-pound 11-ounce can of corn beef with severely dented seams was found on the can storage rack — food packages must be in good condition and protect the integrity of the contents so that food is not exposed to contaminants. Food products in the walk-in cooler were measured at between 42 and 46 degrees Fahrenheit. Potentially hazardous foods prepared and held refrigerated may be held for a maximum of seven days. Pork chops dated Oct. 25 were found in the walk-in cooler. Dishes may be sanitized immediately after being washed and rinsed. The three-compartment sink was set up to wash, sanitize and rinse instead of the proper method. Toxic item must be properly labeled. A working container of sanitizing agent was not properly labeled.
