An employee was observed changing his gloves without first washing his hands. Proper procedures are to remove the soiled gloves, wash hands, then put on new gloves. A 6-pound 11-ounce can of corn beef with severely dented seams was found on the can storage rack — food packages must be in good condition and protect the integrity of the contents so that food is not exposed to contaminants. Food products in the walk-in cooler were measured at between 42 and 46 degrees Fahrenheit. Potentially hazardous foods prepared and held refrigerated may be held for a maximum of seven days. Pork chops dated Oct. 25 were found in the walk-in cooler. Dishes may be sanitized immediately after being washed and rinsed. The three-compartment sink was set up to wash, sanitize and rinse instead of the proper method. Toxic item must be properly labeled. A working container of sanitizing agent was not properly labeled.
