Raw meats were stored above the ready-to-eat foods in the walk-in cooler. Potentially hazardous food prepared and held refrigerated for more than 24 hours must be clearly labeled with the date that the product is to be used or discarded. Cooked rice in the walk-in cooler was not date-labeled. As noted in previous inspections, a single hand-washing sink is not adequate for multiple food-preparation and dish-washing areas.

Food contact surfaces must be kept clean to the sight and touch. The can opener blade is soiled with an accumulation of dried-on food particles. Toxic items must be stored in a manner that prevents contamination of food and equipment. A can of WD40 was stored in a drawer with clean utensils.
