Potentially hazardous foods must be maintained at proper temperatures; hot foods at 135 degrees Fahrenheit or above and cold foods at 41 degrees Fahrenheit or below. The temperature inside the under counter reach-in cooler was measured at 52 degrees Fahrenheit and contents were measured at 50 to 54 degrees.
