An employee drink, in an open container, stored in the wash station with the drink dispenser next to the kitchen door. Food packages shall be in good condition and protect the integrity of the contents so that food is not exposed to potential contaminants. A 10-ounce can of bamboo shoots with severe dents across the seams was found on a storage shelf in the kitchen. Foods shall be protected against cross-contamination by proper storage. A bag of raw meat was stored on top of cooked pizza in the under-counter reach-in cooler across from the wok. Raw shell eggs were stored above ready-to-eat foods in the walk-in cooler. Potentially hazardous foods preserved and held refrigerated for more than 24 hours must be clearly labeled with the date the product is to be consumed or discarded. Foods in the reach-in cooler by the ice machine, in the under-counter reach-in coolers and in the walk-in cooler are not date-labeled. An employee was cutting bell peppers and dropped his knife. He took the knife to the prep sink, rinsed it off, dried it on a towel and then continued to cut peppers with it. The knife must be removed from service until such time as it had been washed, rinsed, sanitized and dried. Hand washing sinks must be kept clean. The hand washing sink in the dish washing area had an accumulation of food particles in it. Working containers of cleaning agents must be clearly labeled with the common name of their contents. Spray bottles located behind the bar and in the wait station with the drink dispenser were not properly labeled. Contamination of food, single service items and clean linens must be preserved by proper storage of toxic items. Spray bottles stored in the cabinet by single service items in the wait station with the drink dispenser by the kitchen door. Gallon jugs of degreaser stored next to food items in the storage room.
