Potentially hazardous foods held refrigerated for more than 24 hours must be clearly labeled with the date the product is to be consumed or discarded. Sliced pork loin in the under-counter reach-in cooler was not date-labeled. Materials used in the construction of food contact surfaces of equipment and utensils may not allow the migration of deleterious substances to food. Frozen strawberries are stored in non-food grade plastic bags. Dishes and utensils must be washed, rinsed and sanitized after being soiled. The employees washed and reused the dishes and utensils. However, they did not sanitize them. The establishment is properly equipped to follow the proper procedure, but the employees just failed to do so.
