Food packages shall be in good condition and protect the integrity of the contents from potential contamination. A 5-pound 12-ounce can of jalapenos with severely dented seam found on a storage rack. Potentially hazardous foods must be maintained at proper temperatures. This includes hot foods at 135 degrees or above and cold foods at 41 degrees or below. Raw egg mixture measured at 47 degrees. Sausage links measured at 92 degrees. No consumer advisory found. Consumers are to be advised that consuming foods of animal origin that are raw or under-cooked increases the risk of food borne illness. Materials used in the construction of utensils and food contact surfaces of equipment may not allow the migration of deleterious substances to food. A brush with a rusty metal band was used to dispense butter. Food contact surfaces of equipment and utensils must be kept clean to the sight and touch. The meat slicer is soiled with an accumulation of dried on food particles. Hand-washing sinks are to be used for no other purpose than hand-washing and must be kept clean. A scouring pad was stored in the hand-washing sink near the mop sink. A cockroach was observed crawling on the floor in the front food preparation area. Professional pest control must be sought immediately and copies of the receipts for treatment submitted to this department by June 18. Working containers of toxic items must be clearly labeled with the common name of their contents. Spray bottles of cleaning agent on the shelves near the employee restroom were not properly labeled.
