The products inside the cooler/make table were measured between 53.2 and 52.5 degrees Fahrenheit. All products removed from the cooler/make table and placed in properly operating cooler. The under-counter reach-in cooler/make table may not be used until such time as the unit can maintain proper temperature at 41 degrees Fahrenheit or below. Dishes and utensils must be sanitized immediately after being washed and rinsed. The dish washing machine is not dispensing sanitizing agent. Until such time as the dish-washing machine is properly sanitizing dishes and utensils, all dishes and utensils must be sanitized in the three-compartment sink using a proper concentration of sanitizing agent.

The following temperature violations were observed in the food prep area and verified with two thermometers: rice in a large bowl, 99.6 degrees Fahrenheit; rice in a container at the grill line, 100 degrees Fahrenheit; chicken and beef in the prep cooler, 47.1 degrees Fahrenheit; noodles on prep table, 61 degrees Fahrenheit; and mushrooms in reach-in area of prep cooler, 49 degrees Fahrenheit. Toxic item in spray bottle under three-compartment sink not properly labeled.

An employee may drink from a closed container if the container is handled in a manner that prevents contamination. An employee drink, in an open container, was found on a shelf in the walk-in cooler stored above and next to food items. Potentially hazardous foods must be maintained at proper temperatures. This includes hot foods at 135 degrees Fahrenheit or above and cold foods at 41 degrees Fahrenheit or below. Cooked chicken stored on a rack in the food preparation area was measured at 78 degrees Fahrenheit. Cooked pasta stored in a bowl on the shelf near the under-counter reach-in cooler was measured at 62 degrees Fahrenheit. Food contact surfaces of equipment and utensils must be kept clean to the sight and touch. The can opener blade was soiled with an accumulation of dried-on food particles.
