Potentially hazardous foods must be maintained at proper temperatures. This includes hot foods at 135 degrees Fahrenheit and cold foods at 41 degrees Fahrenheit or below. Soup and peanut sauce in the warming unit measured at 89 degrees. The soup was discarded; the peanut sauce was reheated to the proper temperature for proper holding. The warming unit may not be used until such time as it can maintain foods at proper temperatures. Food contact surfaces must be maintained clean to the sight and touch. The interior of the ice machine is soiled with an accumulation of a mold-like substance. The ice machine is to be emptied, properly cleaned and then allowed to refill. Working container of a toxic substance must be clearly labeled with the common name of their contents. A spray bottle of cleaning agent behind the bar and a spray bottle of cleaning agent in the wait station were not labeled.

The hand-washing sink in the dishwashing area is disabled. The plumbing has been disconnected. The hand-washing sink must be returned to proper working condition. There is a rodent infestation in the establishment as evidenced by many rodent droppings found in the corner by the ice machine; many rodent droppings found under and around the hand-washing sink in the dishwashing area; many rodent droppings found in the of drink storage area; many rodent droppings found in the cabinets under and around the soft drink dispensers. Many rodent droppings found under the chip display. Professional pest control has been sought. However, pest control has not been here for about a month. If significant improvement is not found upon the next inspection, the process to suspend the retail food establishment license will begin.
