An employee drink, in an open container, was stored in the food preparation area. Food packages should be in good condition and protect the integrity of the contents so that food is not exposed to contamination. A 6 lbs. 10 oz. can of marinara sauce, severely dented at the seam, was found on the storage shelf. Food contact surfaces of equipment and utensils must be kept clean to the sight and touch. The interior of the ice machine behind the bar is soiled with an accumulation of a mold-like substance. Working containers used for storing poisonous or toxic materials, such as cleaners, and sanitizers must be clearly labeled with the common name of their contents. A spray bottle of cleaning agent stored in the kitchen was not properly labeled. Poisonous and toxic materials must be stored in a manner that prevents contamination of food, single-serving items, utensils, etc. Cleaning items were stored next to and above single-serving items and the storage shelf.
