The chicken measured between 59 and 61 degrees Fahrenheit. The chicken was removed from the preparation area to be rapidly cooled to 41 degrees Fahrenheit or below. Only remove from refrigeration a small amount of product to be processed to ensure the product remains at proper temperature. Potentially hazardous foods prepared and held refrigerated for more than 24 hours must be clearly labeled with the date the product is to be consumed or discarded.
