Employee observed washing hands at sink and not using soap after attempting maintenance work and then handling food. Food product held at 53 degrees Fahrenheit (noodles) in food prep area. Potentially hazardous foods to be held at 41 degrees Fahrenheit or below. No hot water provided to the facility for hand-washing or ware-washing. Facility manager has contacted a maintenance person and according to manager they will be on-site this afternoon.

Potentially hazardous foods must be maintained at proper temperatures. This includes hot foods at 135 degrees Fahrenheit or above and cold foods at 41 degrees Fahrenheit or below. There were two large tubs of chicken legs and thigh quarters each containing approximately 30 to 40 rounds of product sitting out at room temperature waiting to be de-boned and cut up. The chicken measured between 59 and 61 degrees Fahrenheit. The chicken was removed from the preparation area to be rapidly cooled to 41 degrees Fahrenheit or below. Only remove from refrigeration a small amount of product to be processed to ensure the product remains at proper temperature. Potentially hazardous foods prepared and held refrigerated for more than 24 hours must be clearly labeled with the date the product is to be consumed or discarded. Noodles stored in the walk-in cooler that were cooked yesterday were not properly date-labeled.
