Automatic dish machine was not operating to hot water-sanitize dishware at the time of the inspection. The booster heater did not appear to be operational. Automatic dish machine should operate at 160 degrees Fahrenheit for wash cycle and 180 degrees F for sanitizing rinse cycle for hot water sanitizing. All equipment and dishware must be washed, rinsed and sanitized using the three-compartment sink until such time dish machine can operate to properly sanitize.

A back flow prevention devices needs to be installed on the mop sink faucet or the hose stored out of the mop sink to provide an air gap.

Employee hand-washing sinks must be accessible at all times with nothing stored in them.

Employees must wash hands between tasks and when returning to work following breaks.

Dishes must be sanitized after being washed and rinsed. The dish machine was not dispensing sanitizing agent because the container of sanitizing agent was empty.

Hand-washing sinks must be kept clean and be used for no other purpose but hand-washing. The hand-washing sink behind the bar in Harrison Grill was used as a dump sink as evidenced by the ice in it. The hand-washing sink in the wait station by Harrison Grill was used as a dump sink as evidenced by the ice in it.

Toxic items such as cleaners and sanitizers must be stored in a manner that prevents contamination of food, clean utensils, single-service items and clean linens. Cleaning agents were stored next to and above clean utensils and single-service items on the shelves behind the bar in the Harrison Grill.
