An employee drink in an open container was stored in the dish-washing area. 2) An employee purse was stored next to sugar packets in the cabinet in the wait station. Food shall be protected against contamination by proper storage of employee personal belongings. 3) Materials that are used in the construction  of utensils and food contact surfaces of equipment may not allow the migration of deleterious substances. A brush with a busted metal band was used in the food preparation process. 4) Dishes and utensils must be sanitized immediately after being washed and rinsed. This dish washing machine was not dispensing sanitizing agent. An employee was observed washing dishes in the two-compartment sink. Dishes were being washed and rinsed, not sanitized. Discussed with person in charge. This practice is to cease.
