These items must be stored separately to prevent contamination. 2) Very large container of marinated chicken sitting at room temperature. Trays of egg rolls sitting at room temperature. Both 2-bay sinks full of raw chicken sitting at room temperature. All potentially hazardous foods must be kept in cold holding between preparation and cooking. 3) Multiple items in the walk-in cooler and deli cooler not date labeled. All items not used in 24 hours must be date labeled. 4) The 2-bay sink with raw chicken sitting in water was found to be 64°F and had been sitting for 3 hours. These must be discarded. 5) The 2-bay sink was not cleaned and sanitized before use for prep of raw chicken. Food shall only contact surfaces cleaned under specifications of this rule. 6) Can opener blade is heavily soiled. Potentially hazardous food contact surfaces must be kept clean of food and soilage.
