1) Employee drinks in open containers stored on shelf in food preparation area. 2) Potentially hazardous foods must be maintained at proper temperature. This includes hot foods at 135°F or above and cold foods at 41°F or below. A tube of cornmeal mash stored next to the grill measured at 59°F. 3) Food contact surfaces of equipment and utensils must be kept clean to the sight and touch. The can opener blade is soiled with an accumulation of dried on food particles. 4) And employee was observed using a cup as a scoop in the ice bin for the soft drink dispenser. This caused bare-hand contact with the ice. Food is to be dispensed using proper utensils.

1) Potentially hazardous foods must be maintained at proper temperature. Three large containers of cut up pork were measured between 44°F and 48°F. Proper temperature is 41°F or below. An employee was cutting up five 7 to 8-pound pork roast for future preparation. This 35 — 40 pounds of meat could not be processed quickly enough to remain out of the temperature danger zone. In the future, roast must be processed in small enough quantities to prevent time/temperature abuse. 2) Potentially hazardous foods prepared and held refrigerated for more than 24 hours must be clearly labeled with the date the product is to either be consumed or discarded. Several containers of cooked foods stored in the walk-in cooler were non date labeled. 3) Food contact surfaces of equipment and utensils must be kept clean to the sight and touch. Grease droplets have formed along the edges of the exhaust hood. These droplets could falls into foods being prepared below. 4) Work container used for storing toxic or poisonous materials such as cleaners and sanitizers must be clearly labeled with the contents. A spray bottles stored behind the front counter with sanitizing agent in it was not labeled. Three spray bottles of cleaning agents in the storage room are not labeled. A large spray bottle of cleaning agent stored on the shelving unit in the food preparation area is not labeled.
