Foods must be protected against cross-contamination by proper storage. Raw meats are stored above produce and other ready-to-eat foods in the walk-in cooler. Potentially hazardous foods prepared and held refrigerated for more than 24 hours must be clearly labeled with the date the product is to either be consumed or discarded. Foods in the walk-in cooler held refrigerated were not date labeled. Menu items of animal origins that can be served raw or undercooked must be indicated and a consumer advisory must be available stating, “Consuming foods of animal origins that are raw or undercooked increase the risk of foodbourne illnesses.”
