Multiple containers of ready-to-eat foods are not date labeled as to date food is prepared or a date that food is to be discarded (not to exceed seven days). Improper use of hand-washing sink in grill for dish washing; this two-bay sink is only to be used for hand-washing, add three-compartment sink to have a dish washing area in grill room. Food contact surfaces of meat slicer, intake tenderizer and meat band saw soiled with dried-on meat. The stump used to cut meat is to be discarded. Chemicals and employee medicine are stored above food preparation surface in kitchen.

An employee drink in an open container was stored in the food preparation area in front of the microwave oven. Cross contamination of foods must be prevented by proper storage of foods. Raw meats were stored above cooked food products in the walk-in cooler. Potentially hazardous foods prepared and held refrigerated for more than 24 hours must be properly labeled with the date the product must be used to discarded. Foods in walk-in cooler are not properly date labeled. Hand washing sink in must be easily accessible at all times. The hand-washing sink in the dish washing area is blocked by employee belonging stored in it. Dishes and utensils must be sanitized immediately after being washed and rinsed. The employee doing the dishes was not using a sanitizing rinse. Toxic items in working containers must be properly labeled spray bottles of cleaning agents are not properly labeled.

Reduced oxygen packaging may not be done until such time as a variance has been granted by the Indiana State Department of Health. To be granted a variance, the establishment must submit an application form approved by ISDH and a HACCP plan. Food contact surfaces must be kept clean to the sight and touch. The can opener blade is soiled with an accumulation of dried food particles. The establishment is canning its own tomato sauce and pickled vegetables. Retail food establishments engaged in the activities of a food processing plant for retail sale must meet the same requirements as a food processing plant. The products are being canned in a “pressure canner.” These products should not be used by the retail food establishment until such time as this department determines that all requirements are being met.
