Ensure brushes are used to remove crust to bare metal between each use as facility has been directed since opening. Pizza oven soiled with baked-on plastic from accidental melting of lid. In-use food contact surfaces such as pizza portion rings, flip-trays at fryer, sauce containers at wings prep, are to be cleaned and sanitized every four hours or stored hot or cold with food product.
