Editor’s note: The information below was compiled from reports of the Bartholomew County Health Department. Critical violations may expose customers to illnesses and typically must be corrected immediately or within days. 1) Potentially hazardous foods must be maintained at proper temperatures. This includes hot foods at 135 degrees Fahrenheit or above and cold foods at 41 degrees Fahrenheit or below. Quiche in the warming cabinet was measured at 106-109 degrees Fahrenheit. 2) An air gap must be maintained between the water supply faucet and the flood rim of a plumbing fixture. The nozzle of the spray hose at the dish washing machine hangs below the flood rim of the sink. 3) There is no hot water in the employee restroom hand sink. Hot water is necessary for proper hand washing.

A ground ounce of bamboo shoots, severely dented on the top seam, was found on the storage shelf. 3) Working containers of toxic material, such as cleaners and sanitizers, must be clearly labeled with the common name of their contents. A spray bottle of cleaning agent was not labeled.
