Potentially hazardous foods must be maintained at proper temperatures. This includes hot foods at 135 degrees Fahrenheit or above and cold foods at 41 degrees Fahrenheit or below. Food products in the table cooler including the refrigerated drawer were measured at 48 degrees, 51 degrees and 60 degrees. These products must be removed to a properly functioning refrigeration unit. Also the table cooler is to be placed out of service until such time as it can maintain foods at 41 degrees Fahrenheit or below. Plumbing fixtures must be maintained in proper working order. There is no water at the hand-washing sink in the dish-washing area. Food contact surfaces must be kept clean to the sight and touch. The can opener blade is soiled with an accumulation of dried-on food particles. The hand-washing sinks must be used for no other purpose but hand-washing. The hand-washing sink behind the bar had a brush and pepper grinder stored in it. Hand-washing sinks must be kept clean. The hand-washing sink in the dish-washing area was soiled by soiled utensils that were stored in it.

An employee drink, in an open container, was stored in the food preparation area. An employee may drink from a closed container if the container is handled in a manner that prevents contamination. Food employees shall not make bare-hand contact of ready-to-eat foods. An employee was observed using a glass to scoop ice from the ice bin. Her bare hand made contact with the ice in the ice bin. Potentially hazardous foods preserved and held refrigerated for more than 24 hours must be clearly labeled with the date that the product is to be consumed or discarded. A large container was found in the walk-in cooler not date labeled. Hand-washing sinks are to be used for no other purpose but hand-washing and must be kept clean. The hand-washing sink in the kitchen near the ice machine was used as a dump sink as evidenced by the ice and drink residue in it. Working containers used for storing toxic materials such as cleaners shall be clearly labeled with the common name of the material. Squirt bottles used for hand soap at the soda fountain are not labeled. A spray bottle of cleaning agent stored in the upstairs mop room was not labeled. Toxic materials must be stored in a manner that prevents contamination of food, equipment, utensils and single-service items. A can of stainless steel cleaner and polish was stored next to single-service items.
