This includes hot foods at 135 degrees Fahrenheit or above and cold foods at 41 degrees Fahrenheit or below. The waffle batter was measured at 52 degrees Fahrenheit. The hand-washing sink in the upstairs wait station had a baking dish stored in it. Hand-washing sinks must be easily accessible at all times.

There was no chemical sanitizer for the three-compartment sink.
