Employee drinks in open container were stored on the center top in the drink station. Potentially hazardous foods prepared and held refrigerated no more than 24 hours must be clearly labeled with the date the product is to be used or discarded. Cooked rice, re-fried beans, cooked chicken and cooked shredded beef stored in the walk-in cooler were not date-labeled. Food contact surfaces of equipment and utensils must be kept clean to the sight and touch. Soft drink cans behind the bar were soiled with an accumulation of a mold-like substance. Bottles on the fountain drink dispenser were stored with an accumulation of a mold-like substance. Interior of the ice machine was soiled with an accumulation of a mold-like substance. A can opener blade was soiled with an accumulation of dried on food particles. There was no hot water in the hand-washing sink the dish-washing area. There was no hot water at the hand-washing sink across from the grill. When water is diverted to supply cleaning agent at the mop sink, it turns off the hot water to the aforementioned hand-washing sink. A professional plumber must be sought to correct this situation. Working containers used for storing poisonous or toxic materials such as cleaners and sanitizers must be clearly labeled with the common name of the contents. A spray bottle of cleaning agent stored behind the bar was not labeled.

Cream cheese on display in the buffet line was measured between 48 and 52 degrees F. Toxic or poisonous materials such as cleaners and sanitizers must be stored in a manner that prevents contamination of food. Single service item, and clean utensils cleaning agents stored next to and above single-service items and clean linens on shelves near the rear sink.
