Potentially hazardous foods must be maintained at proper temperatures. This includes hot foods at 135 degrees Fahrenheit or above and cold foods at 41 degrees Fahrenheit or below. Potentially hazardous foods stored in the walk-in cooler were measured at 50 degrees. All potentially hazardous foods stored inside the walk-in cooler were discarded. No potentially hazardous foods may be stored in the walk-in cooler until such time as it can maintain product temperature at 41 degrees or below. Nozzles on the Pepsi dispenser were soiled with a mold-like substance. Food contact surfaces of equipment and utensils must be kept clean to the sight and touch. The toilet seat is in such disrepair as it is no longer smooth and easily cleanable. Therefore, it cannot be sanitized. Hand-washing sinks are to be kept easily accessible at all times. The hand-washing sink in the dish-washing area is blocked by boxes of single-service items. The presence of insects, rodents and other pests shall be controlled. Approximately a half-dozen rodent droppings were found inside the storage cabinet. Professional pest control must be sought immediately.

Food employees shall not contact exposed, ready-to-eat foods with hands that have not been washed and shall use suitable utensils, such as per issue, tongs, or single-use gloves. An employee was observed making bare-hand contact of ready-to-eat food while cleaning vegetables. Materials that are used in the construction of utensils and food contact surfaces of equipment may not allow the amelioration of deleterious substances. Foods that have been prepared are stored in “thank you” bags in the walk-in cooler and walk-in freezer. Working containers used for storing poisonous or toxic materials, such as cleaners and sanitizers, shall be clearly labeled with the common name of their contents: 1. A spray bottle of cleaning agent was not labeled; 2. A spray bottle of cleaning agent stored under the three-compartment and not labeled. Poisonous or toxic materials shall be stored in a manner that prevents contamination of food, single-service items, clean utensils, etc. 1. A spray bottle of cleaning agent stored by sugar in the dining room cabinet.
