1) Potentially hazardous foods must be maintained at proper temperatures. This includes hot foods at 135 degrees Fahrenheit or above and cold foods at 41 degrees Fahrenheit or below. Foods in the display case were measured between 43 degrees Fahrenheit and 45 degrees Fahrenheit; pork products were at proper temperature; beef products measured at 43 degrees Fahrenheit; poultry products measured at 45 degrees Fahrenheit. Chile picante encurtidos were stored out of refrigeration entirely. 2) Cross contamination of foods must be prevented by proper storage. Raw meats were stored above ready-to-eat foods in the walk-in cooler. 3) Potentially hazardous foods prepared and held refrigerated for more than 24 hours must be clearly labeled with the date the product is to be consumed or discarded. Cooked chicken in the walk-in cooler is not date labeled. 4) Handwashing sink must be kept clean. The handwashing sink in the meat cutting area is soiled. 5) Food and single service items must be protected against contamination by product storage of toxic and poisonous items. A spray can of “Raid Ant and Cockroach Killer: stored next to and above food and single service items. A 25 pound bucket of cockroach pesticide was stored on top of the chest freezer. 6) Pesticides must be used according to the laser. The 25 pound bucket of cockroach pesticide was not being used as labeled. The label reads “Do not use in edible product areas of food handling establishments, restaurants or other areas where food is commercially prepared.” The product is to be used as a map water section; however it is being approved in dry foam among the edges of the meat cutting area. 7) The presence of insects, rodents, and other pests shall be controlled. A mouse was observed running from under one chest freezer across the meat cutting area and behind another chest freezer. Professional pest control must be sought immediately.
