A knife with dried on food material is stored in the meat display case. 3) The plumbing must be maintained in good repair. 4) Working containers used for storing poisonous or toxic materials, such as cleaners and sanitizers, shall be clearly marked with the common name of their contents. A spray bottle of cleaning agent stored across from the ice machine is not labeled. A spray bottle of sanitizing agent stored near the under-service is not labeled. 5) Poisonous or toxic materials must be stored so that they can not contaminate food, equipment, utensils, liners, and single service items.

Cooked chicken in the walk-in cooler is not date labeled. 2) Potentially hazardous foods must be maintained at proper temperatures. This includes hot foods at 135°F or above and cold foods at 41°F or below. Potentially hazardous foods stored in the small black reach-in cooler near the office were measured at 61°F. The cooler unit was not working. The cooler must not be placed back in service until such time as it can maintain food at proper temperature. 3) Food contact surfaces of equipment and utensils must be kept clean to the sight and touch. The meat slicer is soiled with an accumulation of dried food particles. 4) The handwashing sink in the bread area is full of water and will not drain. This makes hand washing in this food preparation area impossible. 5) The nozzle of the spray hose in the dish-washing area is below the food rim of the sink. 6) Hand-washing sinks are to be used for nothing but hand washing. A scrubbing pad is in the hand-washing sink in the front line food preparation area.
