Foods must be protected against cross-contamination by proper storage methods. Raw shell eggs were stored above produce in walk-in cooler. Potentially hazardous foods prepared and held refrigerated for more than 24 hours must be clearly labeled with the date the product is either to be discarded or consumed. El Pastor stored in the under-counter reach-in cooler was not date labeled, and two pans of beef tips stored in the walk-in cooler were not date labeled. Foods must be protected against miscellaneous sources of contamination. The nozzle of the drink gun behind the bar was stored in contact with ice intended for consumption in the ice bin. An air gap must be maintained between the water spray inlet and the flood rim of a plumbing fixture. The nozzle on the spray hose hangs below the flood rim of the sink in the dishwashing area. The water was turned off at the hand-washing sink at the west end of the food preparation line (near the two-compartment sink). The faucet leaks. There is no cold water at the hand-washing sink on the east end of the food preparation line. Hot and cold water must be supplied at the hand-washing sinks at all times.

Working containers used for storing toxic or poisonous materials, such as cleaners and sanitizers, must be clearly labeled with the common name of their contents. A spray bottle of cleaning agent stored under the 3-compartment sink was not labeled. Poisonous or toxic materials must be stored in such a way that contamination of food, utensils and single-service items is prevented. Toxic item was stored next to food on storage shelf.

Potentially hazardous foods must be maintained at proper temperatures. This includes hot foods at 135 degrees Fahrenheit or above and cold foods at 41 degrees Fahrenheit or below. Buttermilk at the breading station was measured at 56 degrees Fahrenheit. Cheese sauce in the dispenser was measured at 97 degrees Fahrenheit. Potentially hazardous foods prepared and held refrigerated for more than 24 hours must be clearly labeled with the date that the product is to either be consumed or discarded. Cooked pork in the refrigerated drawers was not date labeled. Sliced deli meats at the make table were not date labeled. Hand-washing sink must be accessible at all times. The hand-washing sink in the kitchen was blocked by a trash can. The presence of insects and rodents shall be corrected. There were approximately two dozen rodent droppings observed in the cabinet near the alcohol storage room and approximately one-half dozen rodent droppings found in the drawer of the cabinet below the coffee maker. Professional pest control must be sought immediately and copies for receipt of treatment must be provided to this department by 02/22/2022. Working containers used to store toxic or poisonous items, such as cleaners and sanitizers, must be clearly labeled with the common name of their contents. A spray bottle of sanitizing agent in the kitchen was not labeled.
