Facility has not purchased sanitizer as was discussed and required on previous inspection. Inspector spoke with owner and explained that dish, not hand sanitizers, are required. Failure to supply dish sanitizer by 12/14/23 will result in discontinuation of affected food sales. No sanitizer provided for dishes and soda nozzles. Food contact surfaces must be washed, rinsed, and properly sanitized with 100 ppm of chemicals.

Raw eggs stored above cheese in walk-in cooler. Raw animal products must not be stored above ready-to-eat food. Hard boiled eggs stored in walk-in not date labeled when opened. Pudding stored in containers in prep table not date labeled. Ready-to-eat, potentially hazardous food must be date labeled the day the package is opened or the product is moved to a new container. Two containers of pudding stored in prep cooler are heavily covered in mold. Food that has been prepared or opened and is ready to eat must only be kept for seven days. Roaches were seen throughout the facility. Professional treatment must be used and receipts provided. The facility must be deep cleaned to remove food and water sources.

Employee turned over ready-to-eat tortillas on the grill with bare hands. Employees must not touch ready-to-eat foods with bare hands. Raw eggs are stored above ready-to-eat food in two coolers. They must be below ready-to-eat food. Many containers in facility with ready-to-eat food prepared with no date label. All food prepared must be date labeled with when it was prepared. The facility had hot water at the beginning of the inspection, but ran out quickly. The facility must be able to create enough hot water for all needs at all times. Handwashing sink in food prep area had ice in it and is being used as a dump sink. Hand sinks must only be used for washing hands.
