An employee drink in an open container was stored in the food preparation area. Cross contamination of foods must be prevented by proper storage practices. Raw chicken and raw pork were stored above ready-to-eat foods in the walk-in cooler. Potentially hazardous foods prepared and held refrigerated for more than 24 hours must be clearly labeled with the date the products are to be either consumed or discarded. Cooked chicken products in the “Coke” reach-in cooler are not date labeled. Food contact surfaces of equipment and utensils must be kept clean to the sight and touch. The meat slicer is soiled with an accumulation of dried on food particles. Toxic and poisonous materials must be stored in a manner that prevents contamination of food, equipment, utensils, single-service items and clean linens. Cleaning agents are stored above and next to single-service items on the wire rack next to the “Coke” reach-in cooler, and next to and above clean pots and pans in the shelving unit across from the mop sink.
