The sanitizing rinse on the dishwashing machine reached a minimum temperature of 120° Fahrenheit; it must reach 180° Fahrenheit. Until such time as the dishwashing machine is prepared, all dishes and utensils must be sanitized in the three-compartment sink using a proper concentration of sanitizing agent.
