Waffle batter was measured at 59° Fahrenheit and scrambled eggs were measured at 128° Fahrenheit. The ambient air temperature inside of the small, black reach-in cooler was measured at 47° Fahrenheit and the temperature of the products inside was 53° Fahrenheit. This unit must be placed out-of-service until such time as it can maintain temperatures of 41° Fahrenheit or below.

There is no chemical test kit for sanitizing solution on-site. No soap for the hand sink in the dishwashing area was found. Working containers used to store toxic or poisonous materials, such as cleaners and sanitizers, must be clearly labeled with the common names of their contents. A spray bottle of cleaning agent in the dishwashing area was not labeled.

An employee was observed taking garbage to a dumpster and then making bare-hand contact with food without washing their hands. Food must be in sound condition and must not be adulterated. An insect was found in a bulk container of sugar. The sugar was discarded and the container was cleaned. Potentially hazardous foods must be maintained at proper temperatures. This includes hot foods at 135° Fahrenheit or above and cold foods at 41° Fahrenheit or below. Buttered mushrooms were measured at 120° Fahrenheit, sliced watermelon was measured at 50° Fahrenheit, buffalo wings were measured at 125° Fahrenheit and pizza was measured at 125° Fahrenheit. All items were in the buffet line. A container of mussels stored in the kitchen was measured at 66° Fahrenheit and thawing chicken was measured at 57° Fahrenheit. Approximately 40 pounds of chicken was thawing improperly in the three-compartment sink. Food contact surfaces of equipment and utensils must be kept clean to the sight and touch. The work table in the storage room was soiled with an accumulation of food particles.

This department arrived at the establishment at 2 p.m. and there was a sign on the door stating “1:30 to 4 p.m. out of water. Water not running, working on plumbing.” There were 15 to 20 people in the dining room and orders were being prepared. The inspection verified that there was no water. The inspector spoke with management and explained that the doors must be locked and no more food was to be prepared or served until the water is restored. The inspector spoke with the building owner, who said the check valves for the entire building needed to be replaced. The establishment must be shut down until water is restored. No handwashing was possible while there is no water. Management said they would lock the door.
