Priority and priority foundation violations may expose customers to illnesses and typically must be corrected immediately or within days. Core violations, if not corrected, could lead to priority or priority foundation violations or make priority or priority foundation violations more likely to occur.

Potentially hazardous foods must be maintained at proper temperatures. Cooked pork stored in the warming unit at the meat counter was measured at 120° Fahrenheit. A brush with a metal band prone to rusting was observed in use to brush oil and food products in the food prep area. Plumbing fixtures must be in good condition. The handwashing sink in the food prep area did not have a running cold water supply and hot water was not available. Dishes and utensils must be sanitized immediately after being washed and rinsed. An employee in the ice cream area was observed washing and rinsing utensils, then placing them to airdry without being sanitized.

Foods packaged in house must be properly labeled, including all allergens. Bakery products in the display case were not properly labeled. Snack items on display were also not properly labeled. Potentially hazardous foods held refrigerated for more than 24 hours must be clearly labeled with the date the product is to either be consumed or discarded. Diced tomatoes in the reach-in cooler and peeled melons in the produce area were not date labeled. Cutting boards in the meat cutting area and produce area were observed badly scored. Thermometers used to measure air temperature must be accurate by at least 2° Fahrenheit. The thermometer in the ice cream display measured 50° Fahrenheit, but the product was clearly frozen.
