Pork skins were left on a rack at 63.3° Fahrenheit. Potentially hazardous foods prepared and held must be properly labeled with the date, day or time by which the food shall be consumed, sold or discarded. Tamales stored in a pot and wrapped in foil in the kitchen without the use of hot or cold holding was not time dated for use of the public health control.

Ready-to-eat, potentially hazardous foods held at the establishment for longer than 24 hours must be clearly marked to indicate the date to be consumed or discarded. Chicken in the walk-in cooler did not have a date label. Food must be protected from contamination; raw pork skins on a rack were stored stored up against the kitchen wall, and the wall was damaged. No food temperature probe or chlorine test strips were found at the facility. Equipment food contact surfaces and utensils must be clean to the sight and touch. The deli slicer and band saw in the kitchen were not in use and were covered in food pieces and residue. No disposable towels were found at the handwashing station in the bathroom.
