When using time as a public health control, ready-to-eat foods must be labeled to indicate time of consumption or to discard. Cooked shrimp, egg rolls and chicken were measured at 59° Fahrenheit.

Broken thermometers measured incorrectly in the sushi cabinet, two mini fridges and the walk-in cooler. The can opener was observed soiled with food residue and debris. Handwashing sinks must be used for handwashing only. Three handwashing sinks were observed being used as a dump sink, dishwashing sink, or completely inaccessible. All handwashing sinks must be provided with hand towels. Two handwashing sinks were observed without hand towels.

Cut lettuce and sliced tomatoes in the salad prep cooler were measured at 57° Fahrenheit and 59° Fahrenheit. All potentially hazardous foods stored in the pizza make table cooler were measured between 41 and 46° Fahrenheit.

The ambient air temperature in the small, black reach-in cooler was measured at 50° Fahrenheit, the ambient air temperature inside the salad prep under-counter reach-in cooler was measured at 54° Fahrenheit, and the ambient air temperature inside the pizza make table under-counter reach-in cooler was measured at 46° Fahrenheit. The only cooler maintaining a proper temperature is the walk-in cooler. The can opener blade is encrusted with dried-on food particles.

Waffle batter on the breakfast bar was measured at 53° Fahrenheit. Dishes and utensils must be sanitized immediately after being washed and rinsed. The concentration of chlorine at the sanitizing station must be at 50 ppm. The was no color change on the test strip and the sanitizing agent container was empty. A new container of sanitizing agent was opened and the test strip showed the appropriate concentration of chlorine.
