1) Food contact surfaces of equipment and utensils must be kept clean to the sight and touch. 1. The band saw is soiled with an accumulation of dried on food particles. 2. The meat seller is soiled with an accumulation of fried on food particles. 3. The meat tenderizer is soiled with an accumulation of fried on food particles. 2) A faucet is missing from the 3-compartment sink, therefore water cannot be supplied to the third compartment. This condition does not allow for proper use of the 3-compartment sink. No cold water at the handwashing sink in the employee restroom. This may not allow for proper handwashing. 3) Employees are dumping mop water out the back door. This is not a proper disposal method for waste water. 4) Working containers of toxic items, such as cleaners and sanitizers, must be clearly labeled with the common name of their contents. A spray bottle of cleaning agent in the dish washing area is not labeled.
