Raw chicken stored in direct contact with “Thank You” bags in the chest freezer. “Thank You” bags are not food grade containers. 2) Foods must be protected against cross-contamination. A can of coconut milk was stored in contact with diced tomatoes in the make table. 3) Potentially hazardous foods that have been prepared and are ready to eat and are held refrigerated for more than 24 hours must be clearly labeled with the date that the product must be either consumed or discarded. Many cooked meats, cooked chicken, rice, and vegetables stored in the walk-in freezer are not date labeled. 4) There was no hot water at the handwashing sink near the ice machine. Hot water is necessary for proper handwashing.
