Foods must be transferred to other coolers. 3) Potentially hazardous foods prepared and held refrigerated for more than 24 hours must be clearly labeled with the date the product is to be consumed or discarded. Potentially hazardous foods stored in the under container reach-in cooler are not date labeled.
