Cooked chicken stored in the “Coke” cooler was measured at 47° Fahrenheit. Potentially hazardous foods prepared and held refrigerated for more than 24 hours must be clearly labeled with the date the product must either be consumed or discarded. Cooked chicken and other foods stored in the “Coke” cooler are not date labeled. Potentially hazardous, ready-to-eat foods prepared and held refrigerated at 41° Fahrenheit or below may be held for a maximum of seven days. A container of cooked food was found in the walk-in cooler that was dated Jan. 9, 2025. Potential contamination of food, single-service items, utensils and clean linens must be prevented by proper storage practices. A spray bottle of cleaning agent was stored next to a container of drinking straws in on the storage shelf across from the point of sale.
