An employee was observed eating a plate of food, then returning to dishwashing without washing their hands. Employee drinks with caps are improperly stored in the food prep area. Drinks are to be provided with lids and straws and may not be stored on prep counters. Salsa with a date label of April 8, pico with a date label of April 4 and chicken with a date label of April 4 were found in the walk-in and reach-in coolers. Items were date labeled, but past the “use by” date. Items may be held for seven days at 41° Fahrenheit. Spray hoses in the dishwashing and food prep areas are not connected to a backflow prevention device. This violation was noted during multiple inspections. A licensed plumber must be consulted in order to use the spray hoses. Spray bottles and pump sprayers with toxic chemicals must be labeled for their contents on cleaning carts and in the food prep area.
