Sausage patties in the under-counter reach-in cooler were measured at 52° Fahrenheit and ham was measured at 46° Fahrenheit. Food products inside the large cooler were measured at 44° Fahrenheit. The ambient air temperature of the cooler was measured at 49° Fahrenheit. All potentially hazardous foods were removed from this cooler and placed in properly operating refrigeration units. The under-counter reach-in cooler must be placed out-of-service until such time as the unit can be repaired. Toxic or poisonous items must be stored in a manner that prevents contamination of food. A spray bottle of cleaning agent was improperly stored in the food prep area.

Poisonous or toxic materials must be stored so that they cannot contaminate food, equipment, utensils, linens or single-service items. Toxic materials were found on the storage rack next to single-service items in the back storage room.

Food packaged in a food retail establishment must be labeled. Unidentified food in a plastic bag was found on a shelf for resale. A food temperature measuring device was not found in the freezer with chocolate-covered fruit. Hand-drying towels were missing from the employee sink, and the men’s and women’s restrooms.

Food packages must be in good condition and protect the integrity of the contents so that food is not exposed to contamination. Fish was stored in direct contact with “Thank You” bags, which are not food-grade. Foods must be protected against cross-contamination through proper storage practices. Raw chicken and raw shell eggs are stored next to and above fish in the walk-in cooler. A 40-pound box of chicken was stored next to soiled dishes in the dishwashing area. An employee was observed making contact with raw meat with her gloved hands, then touched many food and non-food contact surfaces with the gloved hands. Potentially hazardous foods must be held at proper temperatures. This includes hot foods at 135° Fahrenheit or above and cold foods at 41° Fahrenheit or below. A 10-gallon pot of beans was cooked the evening before and left out at room temperature; the product measured at 97° Fahrenheit. A two-gallon pot of cooked tomatoes and peppers was cooked the evening before and left out at room temperature; the product measured at 78° Fahrenheit. The products were both discarded. Toxic and poisonous materials, such as cleaners and sanitizers, must be stored in a manner that prevents contamination of single-service items. Two spray bottles of cleaning agent were stored by single-service items on the storage rack.

Potentially hazardous foods prepared and held refrigerated for more than 24 hours must be clearly labeled with the date the product is to either be consumed or discarded. Several containers of food in the “Coke” cooler were not date labeled. Cooked rice in the walk-in cooler was not date labeled. Potentially hazardous foods must be properly thawed. A 40-pound box of chicken was thawing at room temperature. A chemical test kit must be used to ensure a proper concentration of sanitizing agent is being used. A chemical test kit was not found on-site. Food-contact surfaces of equipment and utensils must be clean to the sight and touch. Grease droplets are forming the edges of the exhaust hood, which could fall onto foods being prepared below. No towels were found at the hand sinks in the men’s and women’s restrooms, or at the hand sink in the food preparation area. Many flies were found in the back storage area; professional pest control must be sought immediately and the receipt for treatment provided to this department by Aug. 15, 2025.
