Ribs were not being cooled down quickly enough to maintain a proper temperature. Cold holding units must maintain a proper temperature of 41° Fahrenheit for potentially hazardous foods. Raw beef was measured at 50° Fahrenheit. Plumbing systems must be in good repair at handwashing stations and throughout the facility at all times. The handwashing station by the front prep line was shut off due to a plumbing leak.
