Potentially hazardous foods must be maintained at proper temperatures. This includes hot foods at 135° Fahrenheit or above and cold foods at 41° Fahrenheit or below. Buttermilk at the breading station was measured at 51° Fahrenheit. Contamination of food, clean utensils and single-service items must be prevented by proper storage of toxic or poisonous chemicals. Spray bottles of sanitizer were stored next to clean utensils in the make station and next to single-service items in the kitchen, and a bottle of degreaser was stored next to clean pans.

Potentially hazardous foods prepared and refrigerated for more than 24 hours must be clearly labeled with the date the product is to be discarded. A container of cooked ground beef stored in the walk-in cooler was not labeled. Thermometers must be provided in all freezer and refrigeration units. The thermometer in the upright freezer was broken and thermometers were not found in the freezer by the oven or the reach-in cooler. Working containers used to store poisonous or toxic materials, such as cleaners and sanitizers, must be clearly labeled with the common name of their contents. A spray bottle of sanitizer stored in the kitchen was not labeled.
