Raw meats were stored above cooked food products in the walk-in cooler. Foods in walk-in cooler are not properly date labeled. Hand washing sink in must be easily accessible at all times. The hand-washing sink in the dish washing area is blocked by employee belonging stored in it. Dishes and utensils must be sanitized immediately after being washed and rinsed. The employee doing the dishes was not using a sanitizing rinse. Toxic items in working containers must be properly labeled spray bottles of cleaning agents are not properly labeled.

To be granted a variance, the establishment must submit an application form approved by ISDH and a HACCP plan. Food contact surfaces must be kept clean to the sight and touch. The can opener blade is soiled with an accumulation of dried food particles. The establishment is canning its own tomato sauce and pickled vegetables. Retail food establishments engaged in the activities of a food processing plant for retail sale must meet the same requirements as a food processing plant. The products are being canned in a “pressure canner.” These products should not be used by the retail food establishment until such time as this department determines that all requirements are being met.
