Potentially hazardous foods prepared and held refrigerated for more than 24 hours must be clearly labeled with the date the product is to be used at discarded. Due to the problems with the walk-in cooler, all these products were discarded.
Food contact surfaces must be kept clean to the sight and touch. The nozzles of the soft drink dispenser were soiled with a mold-like substance.
Utensils and food contact surfaces of equipment must be sanitized immediately after cleaning. An employee was observed washing dishes in the two-compartment sink in the wait station.
