An employee drink in an open container, was stored in the ice machine ice bin.

Potentially hazardous foods must be maintained at proper temperatures. This includes hot foods at 135 degrees F or above and cold foods at 41 degrees F or below. Cheese sauce in the small cleaning unit was measured at 120 degrees F. All food products in the walk-in cooler were measured at 50 degrees F. The air temperature of the walk-pin cooler was measured at 50 degrees F. The cheese sauce was re-heated to at least 165 degrees F, then placed back in the warming unit set to the proper holding temperature. All potentially hazardous foods in the walk-in cooler were discarded. The walk-in cooler must be placed out-of-service until such time as it can maintain product temperatures at 41 degrees F or below. A service technician was called and is to be on site before the end of the day.

Potentially hazardous foods prepared and held refrigerated for more than 24 hours must be clearly labeled with the date the product is to be used at discarded. Due to the problems with the walk-in cooler, all these products were discarded.

Food contact surfaces must be kept clean to the sight and touch. The nozzles of the soft drink dispenser were soiled with a mold-like substance.

Utensils and food contact surfaces of equipment must be sanitized immediately after cleaning. An employee was observed washing dishes in the two-compartment sink in the wait station. These dishes were not sanitized. Dishes and utensils are to be washed, rinsed and sanitized in the three-compartment sink only.

Dishes and utensils are being washed in the two-compartment sink in the wait station without being properly washed, rinsed and sanitized. All dishes and utensils must be washed in the three-compartment sink using a proper procedure. The practice of using the two-compartment sink in the wait station for dishwashing must cease.

No potentially hazardous food items shall be stored in cooler unless held in the ice baths below 41 degrees F or cooler can maintain food product below 41 degrees F.
