Potentially hazardous foods must be maintained at proper temperatures. This includes hot foods at 135 degrees Fahrenheit or above and cold foods at 41 degrees Fahrenheit or below. Chicken on a stick measured at 90 degrees Fahrenheit, fried dumplings measured at 90 degrees Fahrenheit, fried potatoes measured at 121 degrees Fahrenheit, buffalo wing measured at 103 degrees Fahrenheit, 1-1/2 dozen eggs were out at room temperature. Raw meats and chicken in the make table were measured at 55 degrees Fahrenheit. The counter reach-in cooler for the make table had an ambient air temperature of 56 degrees Fahrenheit. Until such time as this unit is repaired so that it can maintain proper food temperatures, it must be placed out-of-service. Grease droplets have formed on the fire suppression system for the exhaust hood above the woks. This grease could drip onto foods being prepared below. The woks are encrusted with a large accumulation of burnt-on food particles. The floor drain in the dishwashing area is not draining, allowing water to collect on the floor.
