Chicken on the buffet line was measured at 108° Fahrenheit. Yogurt dish on the buffet line was measured at 58° Fahrenheit. Rice pudding on the buffet line was measured at 58° Fahrenheit. Mango custard on the buffet line was measured at 48° Fahrenheit. Potentially hazardous foods prepared and held refrigerated for more than 24 hours must be clearly labeled with the date the products are to be either consumed or discarded. Food products in the under counter reach-in cooler are not date labeled. Food contact surfaces of equipment and utensils must be kept clean to the sight and touch. Grease buildup is forming along the edges of the exhaust hood. Grease droplets could fall into food being prepared below. Handwashing sinks must be easily accessible at all times. The dough maker was blocking the handwashing sink at the dishwashing area. The presence of insects, rodents and other pests must be controlled. Many fruit flies were observed swarming around the dirty linen area. Professional pest control must be sought immediately and copy of receipt for treatment provided to this department by 12-16-23.
