1) An employee drink in an open container, stored in the cabinet in the wash station next to the wait station next to food and single-service items. 2) Potentially hazardous foods must be maintained at proper temperatures. This includes hot foods at 135 degrees Fahrenheit or above and cold foods at 41 degrees Fahrenheit or below. Chicken in the warming cabinet was measured at 78 degrees Fahrenheit. The product was reheated quickly to 165 degrees Fahrenheit, then replaced in the warming cabinet with the thermostat set at 150 degrees Fahrenheit. 3) Potentially hazardous foods must be properly cooled using a two-step process. 1. Cool the product from 135 degrees Fahrenheit to 70 degrees Fahrenheit in two hours or less; 2. Cool the product from 70 degrees Fahrenheit to 41 degrees Fahrenheit or less in four hours or less. Food products that had been cooked several hours and were measured between 84 degrees Fahrenheit and 90 degrees Fahrenheit. These products were to be reheated rapidly to 161 degrees Fahrenheit then cooled using the proper method. 4) Potentially hazardous foods prepared and refrigerated for more than 24 hours must be labeled with the date the product is to be consumed or discarded. Poblano peppers found in the walk-in cooler not date-labeled. 5) Hand-washing sink must be easily accessible at all times. 6) Poisonous or toxic materials must be stored in a manner that prevents contamination of food single-service items. Clean linens, etc. A spray bottle of cleaning agent was stored next to food products in the cabinet in the wait station.
