Cross-contamination of foods must be prevented by proper storage. Raw shell eggs were stored above produce in the walk-in cooler. Potentially hazardous foods must be maintained at proper temperatures. This includes hot foods at 135 degrees Fahrenheit or above and cold foods at 41 degrees Fahrenheit or below. Boiled eggs were measured at 62 degrees Fahrenheit. Cooked rice was measured at 102 degrees Fahrenheit. Potentially hazardous foods prepared and held refrigerated for more than 24 hours must be clearly labeled with the date the product is to be either consumed or discarded. Many products stored in the “Coke” cooler were not date labeled. Several food items in the under-counter reach-in cooler by the indoor oven are not date labeled. Several products stored in the walk-in cooler are not date labeled. The dishwashing machine was not dispensing the proper concentration of sanitizing agent. The sanitizer bucket was exchanged with a new bucket of sanitizer. The machine was primed for several minutes. The dishwashing machine then began to function properly.
