The owner and operator of a retail food establishment shall have a person in charge present at all times. At the time of inspection, the employee stated no one is currently in charge. An employee was found eating and several employee drinks were found in the food prep area. Food packages should be in good condition and protect the integrity of the contents so the food is not exposed to contamination. Three cans with severely dented seams were found in the back storage area. Potentially hazardous foods must maintain proper temperatures. This includes hot foods at 135° Fahrenheit or above and cold foods at 41° Fahrenheit or below. Two tubs of raw chicken stored in the food prep area were measured at 62° Fahrenheit. A container of cooked chicken found in the food prep area was stored at 70° Fahrenheit. Two tubs of raw chicken stored in the three-bay sink were measured at 56° Fahrenheit. Potentially hazardous foods being prepared and refrigerated for more than 24 hours must be clearly labeled with the date the product is to either be consumed or discarded. Foods stored in both reach-in coolers, the under-counter reach-in coolers and the walk-in cooler were not date labeled. Food contact surfaces must be kept clean to the sight and touch. The nozzles on the soda dispenser were discovered to have a mold-like substance. The interior of the microwave was badly soiled and the can opener blade was soiled with an accumulation of dried food particles. The water supply inlet must be above the flood rim of plumbing fixtures. The hose at the sink in the dishwashing area was below the flood rim of the sink. Handwashing sinks must be kept clean and be used for no other purpose than handwashing. The handwashing sink in the food prep area had a scouring pad in it and the hand sink in the employee restroom needs to cleaned. Poisonous or toxic materials shall be stored so they cannot contaminate food. Raw chicken was found next to a bottle of drain cleaner.

Sinks are to be used for handwashing only.

Products in the walk-in cooler were measured at various temperatures. Cooked pork stored on the shelf next to the cooler door was measured at 50° Fahrenheit. Cooked rice and crab rangoon filling on the shelves directly across from the fans were measured at 45° Fahrenheit. Raw chicken on the shelves cross from the cooler door was measured at 41° Fahrenheit. Potentially hazardous foods must be maintained at proper temperatures. This includes hot foods at 135° Fahrenheit or above and cold foods at 41° Fahrenheit or below. The ambient air temperature inside the walk-in cooler measured at 50° Fahrenheit near the fans, and 41° Fahrenheit near the walls. The walk-in cooler is not maintaining a proper temperature. This may be partially caused by the display door not being able to close and seal. The walk-in cooler must be placed out-of-service until such time as it can maintain proper food temperatures.

The hot water distribution and expulsion systems shall be sufficient to meet the peak hot water demands throughout the establishment. The three-compartment sink had been filled in preparation for dishwashing. The maximum temperatures reached in the wait station hand sink and the kitchen hand sink was 91.2° Fahrenheit, with 90.8° Fahrenheit in the men’s restroom and 90.5° Fahrenheit in the women’s restroom. Handwashing sinks must be accessible in the food dispensing, food preparation, and dishwashing areas. The notice sent on Jan. 17, 2024 stated that the kitchen equipment must be relocated and an additional handwashing sink must be installed near the dishwashing area. The additional handwashing sink has yet to be installed. A hearing will be scheduled to determine what action is to be taken against the establishment’s license.
