Potentially hazardous foods must be maintained at proper temperatures. This includes hot foods at 135° Fahrenheit or above and cold foods at 41° Fahrenheit or below. Sliced melon at the buffet was measured at 53° Fahrenheit. Chicken-on-a-stick was measured at 104° Fahrenheit. Buffalo wings at the buffet were measured at 91° Fahrenheit. Peanut chicken on the buffet were measured at 120° Fahrenheit. Potentially hazardous foods held refrigerated for more than 24 hours must be clearly labeled with the date the contents are to be either consumed or discarded. Seven pans of pork roast stored in the walk-in cooler were not date labeled. Food contact surfaces of equipment and utensils must be kept clean to the sight and touch. The — over the wok area had an accumulation of grease droplets along its edges. The droplets could fall onto foods being prepared below. The presence of insects and rodents shall be controlled. There are 15 to 20 rodent droppings inside the cabinet by the ice cream display area. Professional pest control must be sought immediately and record of receipts for treatment must be provided to the department by Feb. 20, 2023.
