Potentially hazardous foods must be maintained at proper temperatures. This includes hot foods at 135° Fahrenheit or above and cold foods at 41° Fahrenheit or below. A large quantity of chicken was being processed. The chicken measured at 50° Fahrenheit. Cooked chicken products were placed on cardboard to cool. Cooked chicken products stored in direct contact with cardboard boxes in the freezer. Cardboard is not a food grade material.

Cheese sauce in the warmer was measured at 99° Fahrenheit. Potentially hazardous foods prepared and held refrigerated for more than 24 hours must be clearly labeled with the date the product is to be either consumed or discarded. Many containers of foods stored in the reach-in cooler in the prep area were not dated. The handwashing sink by the two-compartment in the kitchen will not drain. The plumbing must be in proper working order. The handwashing sink by the two-compartment sink in the kitchen had a bowl stored in it. Handwashing sink must be easily accessible at all times. Working containers used to store toxic or poisonous materials, such as cleaners and sanitizer must be clearly labeled with the common name of their contents. Five spray bottles of cleaner were not labeled.

Potentially hazardous foods must be maintained at proper temperatures. This includes hot foods at 135° Fahrenheit or above and cold foods at 41° Fahrenheit or below. Chicken-on-a-stick was measured at 98° Fahrenheit and buffalo chicken wings were measured at 107° Fahrenheit. A tray of 30 raw shell eggs were stored on the food preparation table at room temperature. The presence of insects and rodents shall be controlled. Approximately a dozen droppings were found on the shelving unit in the storage area containing the water heater and 30-40 rodent droppings were found in the large dry storage room containing the chest freezers. No receipt for treatment has been submitted to this department. Terminex is scheduled to visit the establishment on 2-24-23.
